Directions

  1. Season steaks with salt and pepper and place in airtight container. Bring steaks to 130 degrees for 2 hours.
  2. Remove from water bath and pat dry
  3. Season with salt and pepper a second time
  4. Allow to cool for 15 minutes
  5. Melt butter in iron skillet on medium high heat
  6. Sear each filet on each side for 1 minute
  7. Tent with aluminum foil once removed from heat and allow to rest for 10 minutes
