Ingredients
- 2 8oz Filet
- 1 tsp kosher salt
- Course Ground black pepper
- 2 tbsp butter
Directions

Season steaks with salt and pepper and place in airtight container. Bring steaks to 130 degrees for 2 hours.
- Remove from water bath and pat dry
- Season with salt and pepper a second time
- Allow to cool for 15 minutes
- Melt butter in iron skillet on medium high heat
- Sear each filet on each side for 1 minute
- Tent with aluminum foil once removed from heat and allow to rest for 10 minutes
