Ingredients

• Fillet Mignon ‘tall’ steak 200gm per person
• Bacon slice 1 per serve
• Mustard to taste
• Pepper pinch
• Juniper 2 or three berries
• Rosemary sprig
• Garlic

Directions

1. Marinate for an hour
2. Cook for one hour in Sous vide
3. Finish on high heat

Finishing Steps

1. High heat 30secs each side
2. Serve with Rösti
