  1. 1. Pat dry the steaks and season liberally with salt and pepper.
  2. 2. Place steaks in the resealable bag with rosemary and olive oil.
  3. 3. For rare: cook steaks at 126F for 60 minutes.

Finishing Steps

  1. 1. Prior to removing the steaks from the bag, heat a cast iron skillet to medium-high heat with butter in the skillet.
  2. 2. Allow the butter to melt and continue to move the butter around the pan to allow it to brown, but not burn.
  3. 3. Once the butter is ready, remove the steaks from the bag and immediately place them into the skillet.
  4. 4. Cook the steaks only for approximately 1-2 minutes on either side, just allowing the outsides of the steak to sear shut. You may also do the sides. Rare is 140-145 internal temperature.
