Filet Mignon - Rare

Ingredients
- 2 - 1” thick filet mignon steaks
- Fresh rosemary (a few sprigs)
- 1 Tbsp - olive oil
- Sea Salt
- Black Pepper
- 2 Tbsp - salted butter
Directions
- 1. Pat dry the steaks and season liberally with salt and pepper.
- 2. Place steaks in the resealable bag with rosemary and olive oil.
- 3. For rare: cook steaks at 126F for 60 minutes.
Finishing Steps
- 1. Prior to removing the steaks from the bag, heat a cast iron skillet to medium-high heat with butter in the skillet.
- 2. Allow the butter to melt and continue to move the butter around the pan to allow it to brown, but not burn.
- 3. Once the butter is ready, remove the steaks from the bag and immediately place them into the skillet.
- 4. Cook the steaks only for approximately 1-2 minutes on either side, just allowing the outsides of the steak to sear shut. You may also do the sides. Rare is 140-145 internal temperature.
