Cook 1.5-2” filets and 1.5” Ribeye at 134° for 1 hr and 15 minutes. To get Med Rare filet, reverse sear for 30 seconds twice on each side. To get Medium ribeye, reverse sear 45-50 seconds twice on each side. To get Medium Well filet, reverse sear for 1 minute (or a little longer) twice on each side.
