Eye of Round for lunchmeat

My favorite eye of round recipe for lunchmeat. This is a no salt version.

Ingredients

Directions

  1. Liberally coat eye of round with seasonings
  2. Using butchers twine, make about tour ties equally spaced
  3. Place in a vacuum sealed bag or zip lock bag in fridge for 2 days
  4. Cook at 136F for medium for 6 hours
  5. Put in fridge overnight to cool

Finishing Steps

  1. Rinse off excess seasoning with luke warm water
  2. Slice with meat slicer or carving knife
