  1. Peel the plantain an cut then in chunks.
  2. Mix all ingredients beginning with the sugar in a bowl. Let it rest for 2 minutes.
  3. Seal with the bags and set the sou vide.
  4. Wait for the time for the slow plantain cook .
  5. After the cook time finish caramelizing the plantain in a hot pan with butter.
  6. Serve hot.
