Elk tri tip
Originally we tried 125 for 2 hours, which turned out pretty tough but great rareness. This was a cut from a relatively tender bull elk.

Ingredients
- 1lb Elk tri tip
- 1/4 cup worchestershire
- 1/2 small purple onion sliced
- 2 cloves garlic pressed
Directions
- Add all ingredients to a freezer bag
Finishing Steps
- Sauté in a cast iron pan for 1-2 min on each of all 4 sides of the tri tip.
