Egg Bites.. my version
I’ve tried different cheeses and cook times/temps. This is my favorite. Everyone likes them. One is almost enough for a meal along with some bacon and fresh berries on the side

Ingredients
- 8 organic extra large brown eggs
- 1 cup shredded Gouda cheese
- 8 Tbsp cottage cheese
- A few grinds of fresh cracked peeper to taste
- 8 - 4oz mason jars with lids
- Cooking non stick spray
Directions
- While the water warms to 167, I add the eggs, cheese, cottage cheese, & pepper to a 2 quart measuring cup with a pour spout. I use a Hand Blender to mix together. The egg mixture gets mixed but is not smooth. Spray the jars with the non stick spray. Pour the egg mixture evenly into the 8 jars. Screw on the lids. Cook. Optional: before I add egg mixture to the jars, I cut and add a couple of 1” pieces of store bought pre cooked bacon to the jar
Finishing Steps
- After cooked and when cool enough to handle I run a knife around the inside of the jar to loosen them. I flip the jar over onto a broil sheet pan to release the egg bite. I add some Gouda shreds to the top and broil just long enough to melt the cheese and brown them a bit.
