Egg Bites 6 Servings
This recipe provides 6 single servings. Prep time is 30 min and cook time is 90 min. I do the prep work while the water preheats.

Ingredients
- 4 Eggs
- 4 Oz Cream or Gruyere Cheese
- 4 Slices of cooked bacon-Crispy
- Chopped Cilantro to taste (3 TBL spoon)
- Asparagus cooked firm and chopped into 1/4” pieces
- Milk or cream 1 oz
- Salt and pepper to taste
Directions
- Set your Anova Sous Vide Precision Cooker to 172.0ºF / 77.8ºC.
- Cook the bacon until crispy. Country ham is a good substitute for bacon if you prefer.
- While the bacon is cooking, chop your fresh ingredients. You may want to add tomatoes, onion or any other fresh ingredients.
- Spray 6 4 oz Crystal Jelly jars (or similar) with Pam or equivalent. I have found the jelly jars to be perfect. They are available on Amazon.
- Tear the bacon into small pieces and divide into 6 equal portions. Place the portions in the bottom of each jar.
- Divide your fresh ingredients into six equal portions and place a portion into each jar on top of the bacon.
- Whip the four eggs with the milk or cream and divide into equal portions. Put it in the 6 jars on top of your ingredients. They will be about 3/4 full when done.
- Put the two-piece tops on tightly. Place the jars (using tongs) into the preheated water for 90 minutes
- Remove the jars from the water with tongs after the cook cycle is complete.
- Remove the eggs from the jars. You may need to use a thin blade knife to loosen the egg from the sides of the jar.
- Season to taste and enjoy!
