Egg Bites
Use 4 or 8 oz canning jars with two-part lids. Spray jars with Pam olive oil spray. 
Good fresh out of the cooker or refrigerated then reheated in hot water.

Ingredients
		- 12 eggs
 
		- 1 cup cream or half&half
 
		- 2TBs softened cream cheese
 
		- 1 cup grated cheese (white cheddar or Swiss)
 
		- Bacon or prosciutto cooked crispy and crumbled 
 
		- Salt and pepper to taste
 
		- Optional: pimento or chopped green chilies (1 TBs)
 
	
Directions
		- Set your Anova Sous Vide Precision Cooker to 172.0ºF / 77.8ºC.
 
		- Whisk or use hand blender to mix eggs, cream, cream cheese and salt and pepper. 
 
		- Sprinkle crumpled bacon bits or prosciutto in bottom of jars sprayed with Pam. Save some to sprinkle lightly on top just before sealing. 
 
		- Stir in optional ingredients. 
 
		- Pour egg mixture into each jar until about half full. Sprinkle with grated cheese then fill jars to about ¼” from top. 
 
		- Sprinkle tops with remaining bacon or prosciutto bits. 
 
		- Place a lid and ring on each jar and fingertip tighten then back off a little so air can escape during cooking. 
 
		- Place jars in preheated sous vide cooker using jar holder and cook 60 to 90 minutes. 
 
		
	
Serving
				- Loosen and slide egg bite(s) out of jar(s) and enjoy alone or with avocados or sides of your choice.
