Egg Bites

Use 4 or 8 oz canning jars with two-part lids. Spray jars with Pam olive oil spray. Good fresh out of the cooker or refrigerated then reheated in hot water.

Directions

  1. Set your Anova Sous Vide Precision Cooker to 172.0ºF / 77.8ºC.
  2. Whisk or use hand blender to mix eggs, cream, cream cheese and salt and pepper.
  3. Sprinkle crumpled bacon bits or prosciutto in bottom of jars sprayed with Pam. Save some to sprinkle lightly on top just before sealing.
  4. Stir in optional ingredients.
  5. Pour egg mixture into each jar until about half full. Sprinkle with grated cheese then fill jars to about ¼” from top.
  6. Sprinkle tops with remaining bacon or prosciutto bits.
  7. Place a lid and ring on each jar and fingertip tighten then back off a little so air can escape during cooking.
  8. Place jars in preheated sous vide cooker using jar holder and cook 60 to 90 minutes.

Serving

  1. Loosen and slide egg bite(s) out of jar(s) and enjoy alone or with avocados or sides of your choice.
