Egg Bites

Ingredients
- 6 eggs or egg whites
- 1/2 c grated gruyere cheese
- 1/4 c cottage cheese
- 1/4 tsp salt
- 3 slices cooked bacon cut into pieces
- 6 4oz canning jars with 3 part screw on lids
- You can add spinach shallots bell pepper anything you want. Just place in the jar when you put bacon pieces in
Directions
- Set your Anova Sous Vide Precision Cooker to 172.0ºF / 77.8ºC.
- In a blender or food processor, combine eggs, cheeses ( or other dairy like cream) and salt until smooth
- Place your jars on a work surface and push bacon pieces into the bottom of each jar
- Divide the egg and cheese mixture evenly among jars
- Attach the two part lids and close to fingertip tightness. This means using only your fingertips to tighten the rings. If they are too tight, the air pressure within will not be able to release and the jars will shatter in the bath.
- Once closed, submerge the jars in the water bath and set your timer for 1 hour
Finishing Steps
- Remove from the bath and enjoy straight from the jar if desired! You can also slide a butter knife around the edge, pushing gently onwards as you do to loosen the base. Invert the jar onto heat safe surface and either seat with a torch or place under broiler for a few minutes for color
