Shiitake Bacon Egg Bites
This is a spin on egg Bites. You can substitute cream cheese with cottage cheese. To make shiitake bacon - roll the sliced shiitake mushrooms in a bowl with avocado oil and salt til coated. You lay out on parchment paper in a pan and sprinkle with smoked paprika for a Smokey bacon taste. Then bake in oven til the mushrooms start browning and are dried/crispy. 375° for about 20 min should work.

Ingredients
- 12 eggs
- 2 cups Gruyere/smoked cheese of your choice
- 2 baby red bell peppers
- 4 green onions/only the green part
- 1/4 tsp salt
- Shiitake bacon
- 2tbs cream cheese
Directions
- Set your Anova Sous Vide Precision Cooker to 172.0ºF / 77.8ºC.
- Spray a small amount of cooking spray into 6 8oz jars
- Lay the shiitake bacon in the bottom of the jars. Put any remaining in with the ingredients to be blended.
- Put all ingredients in blender and blend
- Poor mixture into 6 8oz jars and finger tighten lids
- Add to water bath
- Set for 1hr of cook time.
- Remove from water bath
- Put jars in ice bath to cool quickly. 10minutes should be fine.
- Remove from jars by using a butter knife around edges to help the egg bites out of the jars.
- Store in fridge in ziplock bags
- When ready to eat - Slice in half, grate a small amount of cheese of your choice on top of both piece. Either microwave/toaster over or even broiler in oven to melt cheese and warm to desired temp.
