Egg Bites
Based on the Starbucks egg bites with Guyere cheese and bacon. I changed it a little bit and I think it’s much better. The bacon is nice and crispy and the fresh chives and crushed red pepper gives it a little kick. This recipe will make four 4 oz. egg bites.

Ingredients
- 4 eggs
- 4 heaping Tbsp cottage cheese
- 1 tsp corn starch
- 3 Tbsp melted butter
- 1 tsp crushed red pepper
- 1/4 tsp sea salt
- 1/3 cup Monterey Jack cheese
- 1/3 cup Guyere cheese
- 4 strips of crispy bacon - crumbled
- 1/2 cup cheddar cheese
- Chopped fresh chives
Directions
- Blend eggs, cottage cheese, corn starch, melted butter, Monterey Jack and Guyere cheese at a low-medium speed just until creamy.
- Pour mixture into a small mixing bowl, salt and pepper to taste.
- Spray four 4 oz canning jars with nonstick spray. Evenly distribute mix into jars , seal tight and cook in sous vide at 171 for 1 hour.
- Cook bacon until crispy, let cool and crumble. Chop or cut fresh chives and set aside.
- When eggs are done, remove from jar, place on oven-safe dish, top with cheddar cheese and broil until cheese is bubbly. Top with bacon and chives and enjoy.
