Ingredients
- Pork filet
- Himalayan Salt
- Freshly crushed black pepper
- Fresh thyme
- Olive oil
Directions
- Trim the filet and remove any excess fat and silver skin.
Lightly coat with some olive oil, season well on all sides with salt and pepper.
Bag the fillet and add a spring of fresh thyme, vacuumise and leave in the fridge from a couple of hours or even overnight.
Heat the cooker and put the bag straight out of the fridge into the water.
Once done, remove from the bag, pat dry and flash fry in a hot pan.
Wrap in foil and leave for 10-15 mins to rest before serving.
