Directions

  1. Set your Anova Sous Vide Precision Cooker to 129ºF / 53.9ºC
  2. Bag your slice(s) of prepared/seasoned beef in a sealed bag containing little to zero air.
  3. Drop it in the cook water.
  4. Set cooker to 129°; 60-90min. and Start.
  5. It will preheat and start the timer when up to temp.
  6. Remove when done.
  7. Lay cooked meat flat on a paper towel and pat dry, both sides.

Grill marks finishing

  1. Finish on a stovetop grill-pan, or cast iron, or preheated BBQ, 30-45 seconds per side.
  2. Serve.
