Costco Tri-tip

My first long soak. 7 hours at 131. These steaks come pre-seasoned.

Ingredients

• 2.5 pound Tri-tip steak.

Directions

1. 131 degrees for 7 hours.
2. Ice bath in the bag for 15 minutes.
3. Remove from bag and pat dry. Rub with olive oil before sear.

Finishing Steps

1. Seared on Weber Genesis at 700 degrees, 4 minutes each side. Rest for 5 minutes before slicing. I sliced some very thin, most about 1/2 inch thick medallions. Served with grilled zucchini and roasted root vegetables. *My crappy cell phone camera washed out the beauty of these cuts.. The meat was perfectly medium.
