  1. Rinse game hens to remove external ice.
  2. Library season washed game hens with salt and pepper.
  3. Place hens in bag with two sprigs of rosemary on breast and one sprig on back. Add one to two slices of lemon to each.
  4. Add Sherry, soy sauce, garlic, and seasonings to bag
  5. Vacuum seal and place in bath.

Finishing Steps

  1. Preheat oven to 450°; place hens in oven when at least at 350°. If you start roasting before 450°, add 10 minutes to roast time.
  2. Remove birds from bag and pat dry.
  3. Season with garlic and herb seasoning. Add a little little bit of olive oil for improved adhesion of seasoning.
  4. Roast at 450° for 30 minutes.
  5. Covered with oil and allow to rest 5 to 10 minutes while you prepare sides.
  6. Cut hens in half and serve.
