Ingredients
- 2 game hens, frozen
- 1/4 c Sherry
- 1/4 c soy sauce
- 2-3 sprigs fresh rosemary per hen
- Italian seasoning to taste
- 4-5 cloves diced garlic
Directions
- Rinse game hens to remove external ice.
- Library season washed game hens with salt and pepper.
- Place hens in bag with two sprigs of rosemary on breast and one sprig on back. Add one to two slices of lemon to each.
- Add Sherry, soy sauce, garlic, and seasonings to bag
- Vacuum seal and place in bath.
Finishing Steps
- Preheat oven to 450°; place hens in oven when at least at 350°. If you start roasting before 450°, add 10 minutes to roast time.
- Remove birds from bag and pat dry.
- Season with garlic and herb seasoning. Add a little little bit of olive oil for improved adhesion of seasoning.
- Roast at 450° for 30 minutes.
- Covered with oil and allow to rest 5 to 10 minutes while you prepare sides.
- Cut hens in half and serve.
