  1. Combine seasonings and cover roast in seasoning
  2. Vacuum seal roast covered in seasoning
  3. Place in sous vide at 135 degrees for 24-30 hours.

Finishing Steps

  1. Remove from sous vide and vacuum bag
  2. Sear in pan for 2-3 mins per side or on grill at high temperature 2-3 mins per side.
  3. After searing let rest for 5 mins covered in foil
  4. Slice and serve.
