Ingredients
- Sal 4 Tbs
- Ají Panca 2Tbs
- Ají Amarillo 2 Tsb
- Pepper 1 Tsp
- Orégano 2 Tsp
- Comino 1.5 Tsp
- Red wine 1 cup
- Pisco 1/2 cup
- Garlic 2 Tsp
- Coconut Aminos 4 Tsp
Directions
- Brine the Pork overnight
- Set your Anova Sous Vide Precision Cooker to 158.0ºF / 70.0ºC.
- Cut back if the pork, and front ((diamond). Mix ingredients and let the Pork macerate for 12 hrs
Roast
- Finishing in the oven at 245*C for 1 hrs
