Wet And Dry Crispy Fried Chicken Wings

Ingredients
- 4 pounds of wings and drum stick. I suggest getting the whole wings and breaking them apart. A lot cheaper
- Cooking oil Such as canola oil or peanut oil
- Find a jar of your favorite spices mix for wings or chicken
- Two vacuum seal bags or ziplock bags
- Wings sauce
- Hot sauce
Directions
- Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
- Cover wings with spices
- Separate the wings from the drumsticks and put each in their own vacuum sealed bag
- Place the vacuum sealed bags in the Sous Vide
- Prep Dutch oven or cast iron pan for frying oil. You will need the oil to be 375 f temp
- Take wings out of the Sous Vide and cut out of bag. Take a temperature and they will be around 140. Be careful, the chicken is still raw at this point
- Pat dry with paper towel
- Cooking in oil for 3 mins. I did this in 4 batches
- Take half the wings and toss in your favorite wing sauce. I used stubs bbq sweet heat
