Wet And Dry Crispy Fried Chicken Wings

  1. Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
  2. Cover wings with spices
  3. Separate the wings from the drumsticks and put each in their own vacuum sealed bag
  4. Place the vacuum sealed bags in the Sous Vide
  5. Prep Dutch oven or cast iron pan for frying oil. You will need the oil to be 375 f temp
  6. Take wings out of the Sous Vide and cut out of bag. Take a temperature and they will be around 140. Be careful, the chicken is still raw at this point
  7. Pat dry with paper towel
  8. Cooking in oil for 3 mins. I did this in 4 batches

  1. Take half the wings and toss in your favorite wing sauce. I used stubs bbq sweet heat
  2. Enjoy!
