Chef J’s Bacon Cheesy Egg Bites

Ingredients
- 8ea - Eggs, Large
- 1/2 cup - Cheddar cheese blend, shredded
- 1/4 cup - Cream Cheese
- 1 tsp - Rub-A-Dub Seasoning, 5280 Culinary
- 4 Slices - Bacon, Applewood, Thick Sliced - cooked, chilled and chopped fin
- 6ea - 4oz Mason Jars with double lid
Directions
- Wash, rinse and dry all Mason jars and lids.
- Cook bacon until desired doneness, chill and chop into small pieces
- In a blender add the eggs, cheddar cheese, cream cheese and Rub-A-Dub
- Place cover on blender and blend on medium high for 30 seconds or until moisture is creamy and smooth
- Place chopped bacon into the bottom of each cup. Divided equally
- Divide the egg mixture into the 6 mason jars
- Cover with lid and ring and tighten to finger tight ONLY
- *** finger tight lids ensure there is room for the mixture to expand and release pressure
- Submerge in water and Cook for 1 hour at 170° F
- Use tongs and remove mason jars from the water
- Allow to cool on a cutting board for 5 minutes
- Use a paring knife and cut around the egg bites. Turn upside down and tap to release the egg bite
