  1. Place pork collar butt into bowl
  2. Pour one jar Lee Kum Kee Char Siu sauce over pork.
  3. Pour in Shao Xing Wine (Chinese cooking wine
  4. Massage mix over meat until well covered
  5. Vacuum seal pork
  6. Marinate overnight in fridge
  7. Once marinated, remove from fridge and set up Anova sous vide machine to cook at 63°C for 3 hours.

Finishing Steps

  1. Remove and drain meat bag
  2. Pat dry meat with paper towel.
  3. Brush pork with honey. Make sure to turn meat over and brush underside.
