Temperature : 120F / 48.9C

Ingredients

Directions

  1. Salt and pepper Ribeye steak to taste and then add to sous vide/Ziploc bag
  2. Add Rosemary, Thyme, and a crushed garlic clove to bag
  3. Suck as much air as possible (obviously) out of bag
  4. Place into sous vide tank (120° for about 3 hours) and cover with bowl in order to weigh steak down.
  5. Take out of tank after about 3 hours

Finishing Steps

  1. Pat the steak dry and with a high temp oil, sear the steak to a crisp brown and flip to opposite side.
  2. After the first flip, place butter in pan along with thyme and rosemary and butter baste steak.
  3. Rest steak for about 10 minutes and then it's ready to eat.
