- Check roast
- Bill’s seasoning
Directions
- Put in water for 10 hours at 165
- Remove and refrigerate overnight

Smoke at 225 with super smoke until 165
Remove and cut into 1 inch cubes
Return to smoker for 1 hour
Put in foil pan with orange juice bourbon bbq sauce and water until 205
- Remove from pan and increase temp to 350
Return to smoker basket and smoke until 205
Brush with bbq sauce
Remove back to pan and drizzle with honey
Ready to eat
