  1. Salt and pepper one side, Montreal on the other
  2. Seal 1 or 2 patties per bag, freeze for later or cook now
  3. Preheat water to 135. 1.5 hours for fresh, 2 hours for frozen.
  4. Pre heat cast iron pan, super hot. Remove patties from sous vide and pat dry.
  5. Sear patties about 10 seconds per side. Rest on plate.
  6. For cheese burgers lay a slice on resting patties and cover with foil to keep heat around cheese
