  1. Place salt and pepper all over brisket
  2. Place Brisket in bag, remove air and place into Sous Vide at 55 degrees

Finishing Steps

  1. Place brisket on roasting pan. Put in oven at 275 on convection for 2 hours.
  2. Put more kosher salt and cracked pepper on top of roast when putting it into the oven
