  1. Set your Anova Sous Vide Precision Cooker to 130.0ºF / 54.4ºC.
  2. Cook for 24 hours
  3. Add thyme, salt, pepper and smashed garlic to vacuum seal bag or ziplock bag and seal

  1. Sear on all sides in a 500° cast iron pan for 1-2 minutes
  2. Rest for 5 minutes
  3. Slice against the grain
