Temperature : 140F / 60C

Ingredients

Directions

  1. Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
  2. Preseason the roast liberally with lawry’s coarse ground garlic salt and bad Byron’s butt rub. (Preferably allow it to dry brine overnight on a roasting rack in the fridge before bag sealing sealing).
  3. Sous vide at 140 for 4-5 hours.

Grill

  1. Remove from bag and pat dry
  2. Sear on a gas grill appx 1 min per side as hot as you can get it.
  3. Slice and serve.
