Tender New York strip steaks with onions and peppers

Ingredients
- 4 1lb New York strip steaks
- Red and green bell peppers
- 1 whole white onion
- Course salt
- Black pepper
- Fresh crushed garlic cloves
Directions
- Set your Anova Sous Vide Precision Cooker to 137.0ºF / 58.3ºC.
- Season your steaks and add them to the bag
- Thinly slice your peppers and onions and crush your garlic lightly
- Add steaks to the bag (you can bag them individually , it makes this a little easier)
- Add your onions and peppers to the bag with a drizzle of olive oil distributing them evenly around the steak
- Seal your bags and place them in the water bath for 2 hours and 30 minutes or 3 hours
The Finishing Move
- Remove steaks from the bag and pat them dry with paper towels
- Heat a cast iron pan until it’s roaring hot
- Add olive oil to your pan and place in the steaks to get a nice golden brown sear (adding butter during the process helps)
- You can plate your steaks with rice or baked potato if you desire
- Remove steaks from the pan and set on your plate
Using kitchen tongs remove the peppers and onions from the bag and place over top of the steak
- You can drizzle some of the juice from the bag over top of the steak, peppers, and onion mixture for added flavor and moisture
