  1. Rub roast all over with salt and pepper
  2. Place roast inside sous vide bag
  3. Smash garlic and add to sous vide bag
  4. Cook with ANOVA
  5. Remove roast from water when the timer beeps

Finishing Steps

  1. Pat roast dry
  2. Season further with salt and pepper or other desired spices
  3. Heat canola oil in stainless steel skillet on high heat (medium heat for gas stove)
  4. Once oil is shimmering, use tongs to pick up roast and sear 1-2 minutes on all sides
  5. Remove trussing and carve roast
