Black Garlic
Black Garlic is sweet, umami, delicious fermented/aged garlic that you can use in sweet or savory dishes.
This actually takes 336 hours to make(14 days) but the app wont allow you to set a longer time. Just don't turn on the timer with this recipe.

- Set Anova to 150°F
- Vacuum seal 20 bulbs of garlic (I chose to do a big batch since it takes so long; I wanted to make it worth it).
- Set seed garlic into bath.
To help reduce evaporation and heat loss put ping pong balls on top of the water.
Finishing Steps
- After the 2 weeks are up. Remove the garlic from the bags and peel the cloves out from the bulbs. They will easily pop out.
Set your oven* to the lowest setting to dry the garlic.
*you can use other methods of drying as well including smoking.
- Place garlic cloves on a sheet pan and dry for 6 hours.
Once 6 hours are up refrigerate the cloves in a container for up to 9 months.
