  1. Add Salt and Pepper generously to the steak
  2. Vacuum seal and let rest overnight in the refrigerator
  3. Set Anova to temperature and add meat
  4. Cook for 3 hours
  5. Remove and let rest until temperature reaches 40’F. (I do it over night)
  6. Remove from bag and dry with paper towels then add your favorite rub
  7. Set your smoker to 225 and smoke until internal temperature reaches 135 then remove
  8. Head a cast iron skillet to 300-400.
  9. Mix crushed garlic and butter into a paste and rub on one side of the steak. Place the steak on the hot griddle for 2-3 minutes. Rub the second half of the steak with the garlic butter paste and turn and grill for another 2-3 minutes.
  10. Remove and let rest for 5 minutes under a foil tent before slicing into 1/4 inch slices. Serve with your favorite potatoes and vegetables dish
