Ingredients
- Sea salt
- Corse black pepper
- Your favorite beef rub
- Your favorite bbq sauce
Directions
- Trim a packer brisket to 1/4 inch fat cap.
Season generously with a 50/50 mix of salt and pepper.
Vacuum pack and let rest 24-48 hours in the refrigerator.
Set Anova to 135 and cook for 50 hours.
Remove when done, keep in bag and refrigerate for 24-36 hours
Remove from bag ant pat dry with paper towels
Re-season with your favorite beef rub
Wrap in pink butcher paper
Set smoker to 225 and smoke fat side up until internal temperature reaches 135
Remove from smoker , wrap complete brisket in the pink butcher paper with foil and let rest for 30 minutes.
Slice and serve with your favorite side and BBQ sauce
Remove and slice and enjoy
