Ingredients
- 2 cups diced cucumber

- 2 cups diced chinese large scallion

- 1/2 clove smashed garlic

Directions
- The day/night before, place the chicken in a ziploc bag with the can of beer and the lime juice and sliced lime pieces, (optional: add the sliced chili and seeds for a little heat and spice) seal using the water submersion technique and place in the refrigerator to marinate before continuing to the next steps.
- Set your Anova Sous Vide Precision Cooker to 145.4ºF / 63.0ºC.
- The next day, remove the chicken and pat dry and cover with the mashed garlic inside and out. Then combine with all the sliced vegetables and the chicken stock into the same ziploc bag (pour out the beer marinade first) and seal using the water submersion technique and place in the water bath.
This recipe leaves the carrot and celery crisp when served. If you like your vegetables softer when served, steam them for 5-6 minutes, before adding to the ziploc bag.
- After the cook time, carefully remove the chicken and pat dry, strain out the vegetables and put them to the side. Save the stock for use with other recipes or to flavor rice.
Oven or grill
- Coat the chicken in a lite layer of butter, then season with black pepper and additional salt if required and place in a flat pan or on the grill and either broil in the oven or grill (be sure to turn the chicken a time or two if using the grill to finish) until the outside is golden brown - 5-7mins.
- Optional: baste in warm beer/melted butter during the grilling/broiling at least 2 times.
- Remove the chicken from the oven/grill, carve it at the table and serve with the vegetables and sides of your choice.
