  1. Create a rub using the garlic, spices, and olive oil. Salt and pepper the meat, then run down with the olive oil mixture.
  2. Cook at 139 for 8 hours for medium.

Finishing Steps

  1. When done, coat in a light coating of mayonnaise. Set the oven to 550 and broil for around 10 mins, flipping halfway until the outside is crispy.
