Ingredients
- 2.6 lb beef tenderloin, tied
- Butter
- Salt & pepper
- Rosemary
Directions
- Set your Anova Sous Vide Precision Cooker to 139.0ºF / 59.4ºC.
- Brush tenderloin with olive oil and rub generously with kosher salt and pepper.
- Heat olive oil until hot and sear tenderloin on all sides, approx 30 seconds per side.
- Place in vacuum seal bag, add rosemary and butter to the bag and then seal.
- Place in the 139 degree water for 2h40m.
- Remove from the water, cut the bag and remove meat.
- Heat 3 tbs of butter in a skillet until hot, add rosemary from the bag, and then sear meat on all sides, approx 30 seconds per side to create a nice brown crust. Slice and serve!
