  1. Set your Anova Sous Vide Precision Cooker to 139.0ºF / 59.4ºC.
  2. Brush tenderloin with olive oil and rub generously with kosher salt and pepper.
  3. Heat olive oil until hot and sear tenderloin on all sides, approx 30 seconds per side.
  4. Place in vacuum seal bag, add rosemary and butter to the bag and then seal.
  5. Place in the 139 degree water for 2h40m.
  6. Remove from the water, cut the bag and remove meat.
  7. Heat 3 tbs of butter in a skillet until hot, add rosemary from the bag, and then sear meat on all sides, approx 30 seconds per side to create a nice brown crust. Slice and serve!
