Beef Stir Fry
I bought Inside Round Angus beef already 1 inch cubed. This recipe can be used to make a stew or stir fry with fried rice or Chinese noodles with stir fried veggies. Or a nice Beef Bourguignon. This recipe prepares the beef to add to what ever sauces or food dishes you are preparing.
In this case I am going to make a stir fry after the beef is cooked.

This method of cooking has changed my cooking methods a great deal and I find the outcomes a step up for home cooking.

Ingredients
- 2lbs of cubed beef of your choice
- 5 large cloves of garlic
- 1/3 cup of extra virgin olive oil
- Sea salt and cracked pepper
- Porcini mushrooms 1lb sliced.
- 1/2 cup chopped sweet onion
- 1 tbsp Smoked paprika
- 1 large scallion sliced or 4 green onions sliced
- Thin sliced carrots
- Sweet peas
- Thin sliced red peppers
- Marinade: 1/4 cup soya sauce
- 1 tbsp oyster sauce,
- 1 tbsp sesame oil
- 2 tbsp brown sugar
- 2 tbsp honey
- 1 tbsp minced garlic/olive oil
- Thinly sliced ginger in stick formation
- Chinese noodles
Directions
- Set your Anova Sous Vide Precision Cooker to 131.0ºF / 55.0ºC.
- Chop /pulse garlic in oil into small pieces.
- Add all the seasonings and mix well with the meat. Sprinkle the salt and pepper to taste.
- Make a soya sauce mixture with soya , oyster sauce , sesame oil and minced garlic and honey and brown sugar. Make sure you wish well .Only add half of the marinade and reserve the rest.
- Once the meat is seasoned and the marinade is made, Seal the meat and marinade in a zip lock bag using the water bath method. Or use a food sealer. Cook for 2 hrs.
- Slice up all the veggies for stir fry, put aside. Leave onions to the side.
- Boil Chinese noodles. When done rinse thoroughly under cold water and put aside.
- About 10 minutes before the meat is done, heat the oil in the pan. Stir fry the giner and garlic for about 30 seconds trying not to burn the garlic . Stir constantly. Then stir fry the rest of the veggies you are using. il in the pan
- In a separate pan heat up some additional sesame oil . When sizzling add the Chinese noodles , some more of the minced garlic mixture . Toss while frying.
- Take the meat out of the oven and drain . Toss the veggies and meat together . Fill you plate with the noodles and top with the stir fry veggies.
