Ingredients
- 1kg beef skirt steak
- Jar of bulgolgi or kalbi Korean marinade
- Spring onion
- Garlic
Directions
- Chop up spring onions and garlic and place in bag.
Marinate beef skirt steak with sauce for at least 30 mins. Better overnight.
- Set sous vide to 54.4°C
Place in sous vide for 4 hours
- Remove and drain bag. Pat dry with paper towel.
Finishing Steps
- Warm up grill. Cook for 15 seconds on each side on medium to high heat. Flip steak over. Repeat for 4~5 minutes and you'll see some caramelised colour on your steak.
- Rest steak for 7~10 minutes. Inside should be nice and pink.
- Finish with good salt and black pepper.
