  1. Chop up spring onions and garlic and place in bag. Marinate beef skirt steak with sauce for at least 30 mins. Better overnight.
  2. Set sous vide to 54.4°C Place in sous vide for 4 hours
  3. Remove and drain bag. Pat dry with paper towel.

Finishing Steps

  1. Warm up grill. Cook for 15 seconds on each side on medium to high heat. Flip steak over. Repeat for 4~5 minutes and you'll see some caramelised colour on your steak.
  2. Rest steak for 7~10 minutes. Inside should be nice and pink.
  3. Finish with good salt and black pepper.
