  1. Set your Anova Sous Vide Precision Cooker to 144.0ºF / 62.2ºC.
  2. Drizzle olive oil in a pan and soften garlic for 30 seconds on low – med.
  3. Mix salt, pepper, paprika, coconut sugar into a rub and thoroughly coat all meat.
  4. Add meat, onions, garlic, and apples to sous vide bag. If you need two bags, divide onions, garlic, and apples between them.
  5. Cook for 26 hours.

Stovetop

  1. Sear in a hot, cast iron pan for 1-2 min. Serve immediately.
