  1. Dry brine ribs overnight. Dry brining is simply seasoning with salt and leaving in the fridge for a few hours or preferably overnight.
  2. Season with pepper.
  3. Place ribs in bag and add dried onions and garlic.
  4. Place in water bath at 150°F for 36 hours.
  5. Remove from bag and save juices.

Finishing Steps

  1. Finish in the oven at 240°C for 15-20 minutes.
  2. Add pain flour to juices for a delicious gravy.
