Ingredients
- Worcestershire (3 tbsp)
- Butter (1 Stick)
- Chopped Garlic (1 tbsp)
- Salt & Pepper (1 tsp)
- Rosemary (1 tbsp)
- Tyme (1 tbsp)
- Chives (1 tbsp)
Directions
- Wash and dry roast
Pat dry with paper towels
Melt butter
Mix butter and Worcestershire sauce together
Add spices to the Worcestershire & butter sauce
Using a knife or skewer, make 5 to 6 puncture holes in roast.
Rub spiced butter mix onto roast and into holes
Place roast in zip-lock (FREEZER) bag or vacuum seal bag
- Cook with Sous Vise at 130 degrees for 5 hours
Finishing Steps
- To finish in an oven:
Once desired cook time or meat temperature has been reached, remove roast from bag and place on an over safe pan. Using broiler, broil until brown.
To finish on stovetop:
Once desired cook time or meat temperature has been reached, remove roast from bag and place in a skillet that has been preheated on high for 15 minutes. Sear roast on all sides to desired level.
- Before serving, allow roast to set for 10 minutes.
