BBQ Beef Short Ribs ‘Cue style

These were better than the famous KC’s Fiorella’s Jack Stack Barbecue restaurant’s Crown Prime Rib. Guaranteed to melt in your mouth. Select a USDA PRIME BONE-IN BEEF SHORT PLATE RIB. In this recipe I purchased mine from WildFork and only had to do minimum trimming (mainly between the backside bones to give it a V shape contour). This was Sous Vide one day and then smoked the next. I pulled it from the fridge and let it get to room temperature before smoking.

Ingredients

Directions

  1. Rub rack with oil and then generously with salt and pepper. Seal in bag. Sous Vide 12Hrs @ 158F.
  2. Remove from bag. Smoke for 3Hrs @ 225-250. Baste often with Cue sauce throughout this step.

Finishing Steps

  1. Slice individual bones and mop with sauce.
