Barbacoa

Ingredients
- 3 lb chuck roast, cubed
- 8 garlic cloves
- 6 chipotles in adobo
- 1 yellow or white onion
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1 4-oz can green chilies
- Juice of 1 lime
- 2 tablespoons apple cider vinegar
- Salt
- Pepper
- 1/2 teaspoon ground cloves
Directions
- Brown Chuck roast, about 2 minutes per side
- Place all other ingredients in blender or food processor and mix until integrated. It doesn't need to be completely pureed.
- Put everything, including pan juices, into sealable bag and place in water bath.
Finishing Steps
- Pour everything into bowl and shred. Serve as tacos, burrito, quesadillas, or chilaquiles!
