Bacon Gruyere Egg Bites

Ingredients
- 12 4 oz Mason jars with 2 piece lids
- 12 large eggs
- 8 oz cream cheese / neufchatel cheese
- 4 oz gruyere, shredded
- 5-8 oz bacon, cooked and crumbled
- 1 tsp salt, to taste
- 1 tsp black pepper, to taste
- Butter for greasing jars
- Chopped green onions (for toppings)
Directions
- Preheat your Anova to 171 degrees.
- Lightly grease the bottom and sides inside all 12 jars.
- In a large mixing bowl, combine eggs, cream cheese, salt and pepper and beat until smooth.
- Shred the gruyere and divide evenly into the bottom of each jar.
- Crumble the bacon and divide evenly into the bottom of each jar.
- Pour egg mixture into each jar (about 1/2 cup per jar).
- Seal jars finger tight and immerse in water bath for 1 hour.
- Remove from water after 1 hour and allow to cool for a few minutes before serving.
Finishing Steps
- Run a butter knife around the sides of the jar and turn out onto a plate.
- Top with green onion or sour cream and enjoy!
- To reheat, microwave on medium heat for 30-60 seconds.
