Ingredients

Directions

  1. Prepare the marinade. In a small bowl, mix together the soy sauce, garlic, pepper, ginger and 1 TB hoisin sauce.
  2. Pour marinade into a gallon ziploc bag. Add pork and seal. Place in fridge for 1-4 hours prior to cooking.
  3. Set your Anova to 140 degrees. While it is warming up, take the marinating pork out of the fridge and let it rest.
  4. Submerge the pork, removing all air in the bag using the water displacement method. Lip the bag to the side of you container using a binder clip. Let cook for two hours.

Finishing Steps

  1. After two hours, the pork is done and can be removed from the bag. Using a set of tongs, remove and set on a clean plate.
  2. Using several paper towels, blot all sides of the pork to remove the excess moisture. Allow to rest for 10-15 minutes.
  3. In a heavy bottomed skillet, heat up 1.5 TB butter on on high. Brown each side (3) of the pork loin for 60 seconds each.
  4. Remove the pork from the pan and place on a clean plate to rest. Brush on the remaining 1 TB of hoisin sauce on the pork to finish.
  5. Allow pork to rest 5 minutes before slicing. Serve with your favorite vegetables or rice.
