Asian Duck Breast

This is a perfect recipe for a perfectly cooked duck breast. I took it directly from the freezer and seasoned it directly in the bag before cooking it sous vide. It was served together with asian noodles with a ginger and hoisin sauce.

  1. Set your Anova Sous Vide Precision Cooker to 57ºC / 134.6ºF
  2. Take the frozen breast and put all the seasoning in the bag and vacuum seal it.
  3. Cook it sous vide for 3 hours.
  4. Dry it with a cloth and score the fatty side.
  5. Fry it in a smoking hot pan on all side and let it rest for 10 min.
