  1. Smoke roast for 2 hours at 180 degrees
  2. Take roast out and put in vacuum seal bag. Sous vide for 24 hours at 131 degrees
  3. * Arby's Style Sauce * 2 tbsp ketchup 1 tbsp Worcestershire sauce 2 tsp Hot Sauce 1 tbsp Brown Sugar 2 tbsp Water Mix everything together in bowl.
  4. * Cheese Sauce * 2 tbsp Butter 1 tbsp Flour 1 cup of Milk 3 tbsp Cheese Whiz Melt butter in small sauce pan, add flour until well mixed, add milk until mixed thoroughly, add cheese wiz and cook until thick and saucey.
  5. After cooking beef in sous vide, remove and pat dry. Reserve the juice for dipping. Wrap in plastic wrap and refrigerate for 24 hours. Take out and slice thin.

Finishing Steps

  1. Grill bun slightly.
  2. Place sauce on bottom bun. Add meat. Add cheese. Add top.
