Ingredients
- Acorn squash
- Salt - pepper to taste
- 1 Lb sausage
- 1/2 tsp thyme
Directions
- Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC
- Microwave squash for 4 minutes on high then allow squash to cool to room temp
- Cut squash in half and remove seeds
- Cut each half in 1 inch wedges and vacuum bag wedges. Add salt, pepper to squash and butter to bag before sealing.
- Cook at 194 degrees F or 90 degrees C for 1 hour.
Final Prep
- In a separate pan cook 1 pound sausage. Add 1/2 tsp each salt and ground thyme to pan and brown the sausage.
- Remove skin from the cooked squash and mash the pulp add butter to taste in the pulp.
- Fill individual dishes with the squash pulp first. Then layer the browned sausage and sprinkle Parmesan cheese on top.
- Microwave to melt the cheese and warm the squash and sausage.
