  1. Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC
  2. Microwave squash for 4 minutes on high then allow squash to cool to room temp
  3. Cut squash in half and remove seeds
  4. Cut each half in 1 inch wedges and vacuum bag wedges. Add salt, pepper to squash and butter to bag before sealing.
  5. Cook at 194 degrees F or 90 degrees C for 1 hour.

Final Prep

  1. In a separate pan cook 1 pound sausage. Add 1/2 tsp each salt and ground thyme to pan and brown the sausage.
  2. Remove skin from the cooked squash and mash the pulp add butter to taste in the pulp.
  3. Fill individual dishes with the squash pulp first. Then layer the browned sausage and sprinkle Parmesan cheese on top.
  4. Microwave to melt the cheese and warm the squash and sausage.
