Ingredients
- 8oz filet mignon
- 4-5 garlic cloves
- 4 Rosemary sprigs
- Butter
- Salt and pepper
Directions
- *Let sous vide reach temp before putting meat in*
- Season each side of the steak generously with salt and pepper
- Place steak inside vacuum bag
- Add a Rosemary sprig, garlic clove, and thin slice of butter to each side of the steak inside the bag
- Vacuum/Seal and place in the sous vide
Finishing Steps
- Heat cast iron skillet to 475
- Add avocado oil to the skillet (high smoke point)
- Add more rosemary and garlic to the pan
- Sear steak on each side for 1.5-2 min and roll on the sides for 30-40 seconds, basting with the oil/rosemary/garlic mixture
- Rest steak for 5-7 minutes in open air with baste on top
