  1. *Let sous vide reach temp before putting meat in*
  2. Season each side of the steak generously with salt and pepper
  3. Place steak inside vacuum bag
  4. Add a Rosemary sprig, garlic clove, and thin slice of butter to each side of the steak inside the bag
  5. Vacuum/Seal and place in the sous vide

Finishing Steps

  1. Heat cast iron skillet to 475
  2. Add avocado oil to the skillet (high smoke point)
  3. Add more rosemary and garlic to the pan
  4. Sear steak on each side for 1.5-2 min and roll on the sides for 30-40 seconds, basting with the oil/rosemary/garlic mixture
  5. Rest steak for 5-7 minutes in open air with baste on top
