1# baby white or red potatoes
1/4 cup Chicken or beef stock
1 tbsp Thyme
1 onion chpped
1/2 teaspoon sugar
1/4 cup white vinegar
1 tblsp whole grain mustard
1/4 cup parsley

Step 1
Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC

Warm SV to 194*F

Step 3
Place potatoes, thyme, broth and 1/4 teaspoon salt to SV bag and seal

Cook for 75 mins

Add 1 teaspoon olive oil to skillet. Add pnion and cook until softened.

Add sugar, stir until dissolved.

Add vinegar and liquid from potatoes SV cooking.

Reduce in simmer
